Just put some 2nd tyres on to my mountain bike wheels, but now discovered
they are too wide for the current brakes as they are set. Is there a way I
can readjust the brakes so that the wheels can fit in properly?

With all the mountain bike brakes I've seen, be they V-brakes or old style
cantilever brakes, it is possible to disconnect the brake cable from one of
the brake arms while it remains attached to the other by a pinch bolt.
Squeeze the two brake arms together, disconnect the brake cable, install the
wheel and please don't forget to reconnect the brake cable before you ride
away. If this doesn't allow the wheel to fit in, partially or entirely
deflate the tire/tyre, install the wheel, and don't forget to reinflate the
tire/tyre and reconnect the brake cable before you ride away.

Most mountain bike brakes have an adjusting barrel on the brake lever that
will tighten or loosen the brake cable, moving the brake pads closer to or
further away from the rim in a manner similar to adjusting the brake shoes
on a car with drum brakes. Loosening the cable with this adjusting barrel
can facilitate disconnecting the cable, but return the brake pads to their
original position before you ride away.

Two sets of tyres will usually make the wheels too fat.
Try taking the old ones off first.
