Response to question: No. Why? Derailleur mechanical advantages are
completely different.

I'll swap an Ultegra rear for a Campy rear.

For two chainrings, yes, any deraialleur will work. For three, very probably
not, as trim for the middle chainring on Ultegra shifters is decidedly
rudimentary.

Short answer is no...you can muck about with cable routing or little roller
thingys or cog spacing but the thing to do is just get a shimano rear der ifya
have shimano shifters...
