Default Stage Races Speeds ( Pro's )

For example in a stage race like the Tour De France.

Say a good 200 K stage.
What sort of speeds do the riders sit on in the early part of the race, like
the first hour or so.

I know they average around the 45 k an hour mark for the whole race, but I
wanted to know how they start a race, what speeds do they do.

Thankyou

If you have a look at the site

http://tdf.polar.fi/tourdefrance/heartrates.html

it has speed (blue) as well as the altitude (maroon), and heart rate (red)
for all stages.
