Hydrogen for the ‘Hy-Cycle’ can be produced with as little as 100
millilitres of water. The water is split into its elements oxygen and
hydrogen and the fuel cell recombines the hydrogen with oxygen to produce
electricity. The researchers believe hydrogen power should be used
similar to other renewable energy technologies such as solar.
Producing the hydrogen could itself be rather polluting, depending on
the source of energy (electric etc) used.

I got as far as "2.5kg cannister of hydrogen". (between the legs) No
thanks.

The big problem with renewables is storage for cloudy windless days. H2 is supposed to be cheap energy storage.

A Li-ion battery has a better round trip efficiency but costs 2X more than the total grid electricity it will store over its lifetime.

Electrolysis isn't very efficient either but there isn't any dependency on lithium. Last year was some research on how photosynthesis splits water, in 2 stages or something. It's supposed to be more efficient than electrolysis.

A bigger problem will be someone taking it apart.

You use the bicycle dynamo to electrolyse the water to produce the Hydrogen
to power the fuel cell.

In fact you can produce more hydrogen on the downhills than you need for
the uphills, so when you get home you can use the rest to cook your
dinner. It's true, I saw it on YouTube. ;-)

This only works if you also have a wind turbine on the handlebars.

There's been many a debate about whether you could do that;
Yes it can:
