From what I'm told Ultegra 10 speed shifters don't work with ATB 10 speed RD. Matching shifter and RD always a good idea. Why not Ultegra RD?

I've always used "mismatched" shifters and derailers, at least up to
8-speed.

Mismatch only with front changer travel. May have to move
the front gear wire to the other side of the anchor bolt and
that makes for a very stiff shift response. Why not a road
triple front changer?

There are better ten chains (and at a lower price) which
include matching snap link.
Also note that mini-V have really tight tire clearances.

Thanks for the answer.
1. Would be better to combine Ultegra FD-6703 Front Derailleur 3x10
with Shimano Deore XT FC-T781 Crankset 3x10-speed 48-36-26?
2. May I use a normal V-Brakes with Ultegra ST-6703 STI 3x10 Dual
Control Lever? Frame and fork support usual V-Brakes;

You will have trouble matching Ultegta shifters with Deore XT triple
front crank. The Shimono technician here advised that it would not
work. I use a non indexed bar end shifter for front shifting and a 10
speed Ulterga front shifter with a Deore XT 10 speed rear cassette. The
rear derailleur is a 10 speed Ultegra. It shifts perfectly. (They are the
2011 model.)

FD won't work. shimano road STI doesn't really talk to MTB FDers.

Use a 6500 FD, chain tooth differences will mean it'll work. make the
chainline the best you can with the BB spacers included.

Use a KMC chain, better, cheaper chain with a snap link.

Mini Vs stop really well, not a lot of clearance to tire tho. If you
use full size Vs, need a travel agent thingy, which eats cables.
